NATURAL WINES BY WEINGOUTTE
Weingoutte is run by Christoph Müller, a German winemaker, and Emily Campeau, a sommelière from Québec. They met during the 2018 harvest at Weninger in Burgenland, Austria, and made their first wines there. Around 2021 they moved to Hüttenheim in Franken, taking over a farm from Linda and Erhard Haßold, who still work the vines with them. The soils are Gipskeuper, a gypsum-rich clay, and about a third of the vines are fungus-resistant PIWI varieties such as Regent and Johanniter.
Christoph trained in Neustadt and worked for Clemens Busch. Each variety is usually handled on its own, with macerations from one night to two weeks, then ageing in steel and used 500-litre barrels. Most wines get a microdose of sulphur before bottling. Du Bist Du is pure Schwarzriesling, the German name for Pinot Meunier, from vines planted in 1995 and aged in one old barrel.
