Chardonnay by Fujimaru is a natural wine made in Yamagata with Chardonnay grapes.
Slightly sparkling chardonnay which is very very nice, but not with the same crrrrazy vibes as some of the other Japanese wines we offer.
Don’t be out off though - this wine is lovely. Ever so slightly smokey, flinty, buttery and camomile notes.
Founder Tomofumi Fujimaru has been one of the key figures in making wine a more popular and natural part of the Japanese everyday cuisine.
The Osaka team works primarily with vineyards in the local area, the small Tokyo winery focuses on single-varietal wines made in collaboration with farmers from Japan’s eastern regions.
This Chardonnay comes from a vineyard of dark volcanic soil in the Yamagata prefecture, where European varieties have been grown since the 1960s. Fermented in oak barrels and aged on the lees for seven months, it is a quiet and feathery-light interpretation of the grape – floral and aromatic with beautiful pine wood notes on the nose.
Just 15ppm sulphites added at bottling.
