Saalwächter is a historic vineyard having first been developed by Paul Christian Saalwächter in 1853, who was the mayor of the limestone-rich region of Ingelheim. The winery is now run since 2017 by youthful winemaker Carsten Saalwächter who is being described as one of the most exciting German winemakers to shake up the natural wine scene, making elegant and gastronomic, precise wines that are getting Somms very excited in the best restaurants!

We actually had to double check the price of his entry level Spätburgunder to check this Pinot Noir really is this price - as after ONE sniff, we knew it was too complex to be under 20 euros... but we were wrong. Because of that, we claim it to be one of the best value Nerd wines ever... and insane value with its ashy nose and mineralic, structured mouthfeel. Is this a whole new world of German Pinot Noir? Carsten Saalwächter - Burgundian wines in Germany
Saalwächter has plots in both Ingelheim as well as the very steep, slate driven slopes of Assmannshäuser Höllenberg which he describes as real Grand Cru plots.
Assmannshausen features extremely steep slate slopes with gradients of up to 70% combined with ancient vines form an unmistakable foundation for Assmannshausen Pinot Noir, especially from the Höllenberg.
With Ingelheim, Carsten has small plots of land, featuring many different microclimates in combination with a barren shell limestone soil that offer a great stage for white and red Burgundy varieties. The Silvaner from here is Carten's most special grape, and his favourite release. It is meant to be mind-blowingly good and we can't wait to try it!
