Bigotes 2021 ( by Frederic Cossard is a natural wine wine, made in Burgundy with Chardonnay grapes.

Production details of Bigotes: Bigotes is Frédéric Cossard's Bourgogne Blanc Chardonnay, made from 40-year-old vines on clay and limestone soils close to Puligny. Frédéric started his project in 1996 and farms about 6 hectares near Saint Romain. The grapes are pressed directly into qvevri (Georgian clay vessels), where the wine rests on its lees for 9 to 12 months. No added sulphur. He even avoids it for cleaning barrels, using ozone instead.

Tasting Notes: We have not yet tried this vintage of Bigotes by Frédéric Cossard, but we hear it has notes of fresh apple, chalky mineral, stone fruit and a clean, salty finish.
