Ayunta is a family owned natural wine producer based on the Mount Etna volcano in Sicily. There they hand-harvest indigenous grapes from 2.8 hectares of vineyards, situated about 700 meters above sea level. Ayunta prefer to think of themselves as grape-growers even before winemakers, and their winemaking philosophy is only grapes and time - no additives except a tiny amount of sulphur are used and the wines are released, only when deemed ready.
Expect a different take on Nerello Mascalese here, as well as an interesting Blanc de Noir still wine that is quite uncommon in the region...
