Vina Čotar | Čotar wine
Vina Čotar is a natural wine producer from the Kras region in Slovenia, farming around 7 hectares to produce 3500 bottles a year. Originally making wine for their own restaurant, the project expanded but the winemaking has been the same since it started in 1974 - back then, they claim they did not even know what Sulphur was, partly due to lack of information coming in from the "Soviet Curtain". Čotar are masters of the grape Teran, and also make very impressive blends with Cabernet Sauvignon & Merlot blends alongside Malvasia and local grape Vitovksa which are grown in the region of Karst, close to the Carso region of Friuli where producers like Zidarich operate.
Čotar wines are complex, refined yet rustic, expressive yet soft. A unique wine producer everyone should try.... and remember to get one to age too - as they age very gracefully.
