Hautes Côtes de Beaune 'Puits de Chaux' 2018 by Frederic Cossard of Domaine de Chassorney is a premium red wine made in Burgundy with 100% Pinot Noir grapes, which are vinified in a concrete egg, with grapes grown on the iconic Hautes Côtes de Beaune.

The vines of Bourgogne Hautes Côtes de Beaune grow on the south/ southeast-facing slopes of valleys, which are cut into the limestone plateaus at between 290-485m.

NATURAL WINES BY FRÉDÉRIC COSSARD

Frédéric Cossard trained in the dairy industry and worked as a wine broker before starting out in 1996 with rented plots in Saint-Romain and Auxey-Duresses. That became Domaine de Chassorney. In 2006 he and his wife Laure added a négoce, buying from long-standing growers in the Côte de Nuits, Côte de Beaune and the Jura. Their own vines are bottled as Chassorney, bought-in grapes as Frédéric Cossard. In 2022 Chassorney passed to Aurélien Verdet.

Cossard is known for whole-bunch reds, concrete eggs and, since a 2017 trip to Georgia, buried qvevri used for ageing. Many cuvées have no added sulphur, and the best age brilliantly. For something affordable, try Super Pink, a playful Cinsault rosé, or the Feel Good and Zizifredo skin-contact wines. For serious Burgundy, look at Saint-Romain 'Sous Roche' and 'Combe Bazin', Volnay and Bedeau.
