Paul-Henri Thillardon makes Gamay in Chénas, across fourteen hectares spread over three Beaujolais crus.
Les Carrières grows on flint soil on an old alluvial quarry facing south. Fruit is picked by hand into 20kg boxes and cooled to 7 to 10°C before it reaches the cellar, then destemmed, macerated for anywhere between fifteen and twenty-eight days, pressed vertically and aged in concrete vats. Sulphur sits around 10 mg/L. The 2019 Les Carriers drinks closer to Pinot Noir than to most Gamay: light but characterful, with black cherry, iron, vanilla and forest floor, herbaceous without being green. Vibrations is the third wine. Which vintages are on the shelf changes through the year.
