Les Voisines is a natural wine crafted by Domaine de la Touraize, in the Jura region in France. This white wine grown around the vineyards of Arbois is made with 100% Chardonnay grapes, which features lively notes of chamomile, lime and butter aspects which work a treat together with the nice acidity. Would work a real treat with fish.

Terroir: 3 hillsides: Gravel on marl, limestone and blue marl.

Cultivation method: Winter and spring: "Guyot" pruning. Tying in an arch. Addition of chemical-free matter at the end of winter. Spring and summer: Disbudding then lifting. The vine treatments are exclusively based on copper (dose/Demeter), herbal teas and sulfur, without pesticides. Our land is plowed several times during the season between the rows and "under the row". Spreading of horn manure (500p) and silica (501) for the natural strengthening of the plant. No chemical weeding. The grapes are harvested in 300 kg bins.
Vinification: pneumatic pressing of whole bunches. Light static settling by gravity
(12h). Spontaneous alcoholic fermentation obtained with the grape's indigenous yeasts.
Alcoholic fermentation and Malolactic fermentation in 500 L barrels without additives or sulphites.
After Malolactic, addition of 2g/hl of sulphites due to unfinished alcoholic fermentation.
Aging: 2 winters on fine lees in wood. Regular topping up without racking throughout the entire aging period.
Bottling: without filtration, fining or sulphites.
