Sébastien Morin is very much zero-zero - no added sulfur added whatsoever. He kicked off his winemaking journey under the mentorship of Jura legend Jean-Marc Brignot, adopting a similar approach with long, slow pressing and gravity racking. He works a small 1.5-hectare plot in Saint-Étienne-des-Oullières, Beaujolais, but also buys some negociant grapes to meet the growing demand for his wines.
