Rose & The Beast 2023 by Valli Unite is a sparkling Pet Nat wine, made in Piedmont with Cortese, Malvasia and Barbera grapes.

Valli Unite is a collective of families who have formed a cooperative, farming vegetables, animals, fruits, wheat and of course, grapes for wine.

Production details of Rose & The Beast: Rose & The Beast comes from Valli Unite in Costa Vescovato, Piedmont. This sparkling Pet Nat blends Cortese, Malvasia and Barbera from their 100-hectare cooperative estate. The wine is made in the ancestral method, finishing its second fermentation in bottle for natural sparkle.

Tasting Notes: We have not yet tried this vintage of Rose & The Beast by Valli Unite, but we hear it has notes of strawberry, grapefruit soda, herbs and a bone-dry finish.

NATURAL WINES BY VALLI UNITE

Valli Unite is a farming cooperative in Costa Vescovato, in the Colli Tortonesi of south-east Piedmont. Three young local farmers, Ottavio Rube among them, set it up in 1981 to keep farming rather than leave the land. Today a few dozen people farm around 100 hectares, sharing the jobs and earning the same, with vines alongside cereals, a vegetable garden, Piedmontese cattle, bees and an agriturismo.

They moved to natural winemaking from 2006, and since 2013 every fermentation has been spontaneous, with only small amounts of sulphur. Most wines ferment in stainless steel and rest in cement, and the grapes are local: Barbera, Dolcetto, Croatina, Cortese, Timorasso and Favorita. Ottavio Rube Rosso and Bianco, Alessandrino and the Bag in Box Rosso are everyday favourites, Terragno is a skin-contact Cortese and Favorita aged in acacia, and San Vito and Derthona show the more serious side of Timorasso.
