NATURAL WINES BY AZUL Y GARANZA
Azul y Garanza works on the edge of the Bardenas Reales semi-desert in Navarra, northern Spain, where harsh conditions give small crops of tiny, concentrated grapes. In 1999 María Barrena, Fernando Barrena and Dani Sánchez took over a cooperative winery in Carcastillo, first built in 1940. The soils are thin, poor clay and limestone, and it barely rains. They plant native species, keep the vineyards small and protect the forest around them, because biodiversity makes the vines stronger.
The cellar still uses the old cooperative's semi-buried concrete tanks plus oak barrels and foudres for the classic range. Garnacha leads, with Garnacha Blanca, Tempranillo and Viura. The Naturaleza Salvaje wines spend six months in concrete, and the white is fermented on its skins. Piripi is a Tempranillo with no added sulphur. María is also behind Entre Vinyes in the Penedès.
