Nimbus Ritinitis 2025 is a natural wine crafted by Kamara Pure, in the Macedonia region in Greece. This orange wine is made with Assyrtiko grapes, as well as the addition of Pine Resin during fermentation giving this orange wine a truly unique flavour profile compared to non-Greek wines. Retsina wines are traditional in some parts of Greece... but not often found in natural wines! Here this incredible skin-contact wine has no added sulphites.

Kamara Pure Tasting notes:

Bright yellow to amber colour. Intense nose with emerging aromas of thyme, lavender, oregano and ginger.

Herbal and vegetal notes in the palate, with an intensive expression of bergamot and kumquat along with resin and thyme. Hints of Chios mastic at finish prove the quality of the pine resin used. Balanced acidity with a fruity and herbal feeling in the long lasting aftertaste.

History of the label: This recipe of retsina is over a century old made by our great grandfather. The name of this wine, Nimbus Ritinitis, means orange cloud and it pictures a landscape in our vineyards during the early evening hours.

Nimbus Retsina winemaking

The skins of Assyrtiko macerate in stainless steel tanks with the must for 5-8 days at low temperature. The grapes are destemed. After removal of the pomace, the must produced by the first run juice ferments at 18º- 21º C for 20-30 days. During the fermentation high quality pine resin from the mountains of Evia is added, following the ancient recipe. Spontaneous alcoholic fermentation with indigenous yeasts, no oenological substances added, followed by spontaneous malolactic fermentation. The produced wine is racked from the very dense sediments and stirred on fine lees for three months in old barriques. No protein stabilization, only tartaric stabilization. No fining, no filtration. No sulphites added.

NATURAL WINES BY KAMARA PURE

Kamara Pure is the natural range of the Kioutsoukis family, farming 11 hectares on the Mygdonia slopes 30 km from Thessaloniki. The family came from Eastern Rumelia on the Black Sea in the early 1900s, and Dimitrios Kioutsoukis founded the winery in 2010. The vines sit at around 140 metres on an old seabed of clay, sand and schist, mostly Xinomavro, Assyrtiko and Malagousia.

Vines are hoed and picked by hand and treated with nettle and yarrow. Wines ferment with wild yeasts and age in old barriques or clay amphorae, and the Pure range gets no added sulphur. Start with Nimbus Albus, Assyrtiko and Malagousia, or Shadow Play White. Their Retsina uses a little Aleppo pine resin from Evia, and Keramos Amphora Red blends Xinomavro and Limnio.
