Pedro Ximenez
Pedro Ximenez is a white wine grape that is primarily grown in the Andalusia region of southern Spain. It is also cultivated in other parts of Spain, as well as in countries such as Argentina, Australia, and Chile.
Whilst there are dry wines with it, this grape is mainly known for producing rich, sweet wines with intense flavors of raisins, figs, and caramel. The grapes are typically dried in the sun before being pressed, which concentrates their sugars and flavors. This process gives the resulting wines a luscious, syrupy texture and a deep, dark color.
Pedro Ximenez wines are often enjoyed as dessert wines due to their sweetness and complexity. They pair well with rich, chocolate-based desserts, as well as strong cheeses like blue cheese or Roquefort.
The grape itself is relatively low in acidity, which contributes to its smooth and velvety mouthfeel. It is also highly resistant to diseases and pests, making it a popular choice for winemakers.
