Vin Jaune
A Vin Jaune is a Savagnin aged for at least 6 years + 3 months in a small barrel, without topping up. This aging process in barrel creates micro-evaporation and results in less wine over time, of which the taken amount is referred to as the 'Angels Share'.
In fact, in respect of the Angels Share all Vin Jaune bottles are not 750ml as standard, but 620ml to represent what was lost in order to make such a special wine.
The protective Flor of yeast floating on top protects the wine from too much oxidation and spoiling the wine. Over time, concentrated flavours develop unlike most other wines, and you will find a distinctive nose of Curry powder alongside nuts, raisin and other unusual wine notes.
Representing just 5% of total Jura production, this traditional, dry 'Yellow Wine' is truly wonderful paired with aged Comte cheese or hearty meals.
