Jobitaki by Sakai Winery (JAPAN) is a natural wine made in Yamagata with Koshu grapes.
MORE Tasting Notes:
Absolutely beautiful sparkling wine!
Honestly... we would choose this over most champagnes :)
Less 'crazy' than many others in our Japanese range, but still with that distinctive 'Japanese wine' uniqueness, this wine has a stunning evanescence in its bubble structure. Very elegant! Notes of Elderflower and Apple shining through in the most pleasant way.

Sakai Winery is one of the oldest producers in Japan, established in 1892. It is still run by the fifth generation of the same family and now part of the first small wave natural winemakers in Japan.
Jobitaki is a lightly sparkling orange Koshu, fermented on the skins at low temperature for one month. Typically associated with the Yamanashi region, west of Tokyo, Koshu grapes grown in the northern Yamagata shows more acidity and freshness. This iteration carries flavours of crisp green apple, jasmine, some oxidised notes, and a salty minerality on the finish.
No sulphites added.
