Yves Roy cut his teeth at Domaine Les Pieds sur Terre with Valentin Morel, learning the ropes in Poligny, JURA over several years before striking out on his own. In 2020 he launched Domaine Nøvice, working from the five hectares of vines he purchased back in 2014 — land he has since converted to certified chemical free farming.
For now, he focuses on old-vine Savagnin and Poulsard, crafting wines with depth and character from mature plantings. He has also recently added Chardonnay, Trousseau and Pinot Noir to the estate, with the young vines expected to come into full production around 2025. However, he also does some Negoce work, and we have been especially impressed with his cans of sparkling wine, with no added sulphites! These are technically like a Pet Nat, except made in special tanks where the bubbles function well so it finishes its fermentation in them under pressure so bubbly.
“Novice” (spelled Nøvice on the label) refers to the mindset he wants to keep: staying curious, staying humble, and always learning. Even after training with Valentin Morel and working his own vines for years, he sees himself as someone still in progress rather than someone who has “arrived.”
