Meeting Didier Grappe is an eye-opening experience. Having been classically trained in Beaune, his natural winemaking methods revolt against the norm, and as he states in this portrait 'You spend a lot of time unlearning all the bullsh*t you learn at school'. But Didier is also different from the other winemakers in the Jura. With an strong desire to not need to treat his vines with anything, whatsoever, he has publicly stated he will never plant another non-hybrid grape again and instead is looking to his future with Hybrid varietals, something he is a pioneer of in the region alongside only a few others.
