NATURAL WINES BY CHAVOST CHAMPAGNE
Chavost is based in Chavot-Courcourt, on the Coteaux Sud d'Épernay, and takes its name from the village's old name. It began in 1946 as a growers' cooperative set up by local families, and in 2019 Fabian Daviaux, a seventh-generation grower, took over as cellar master and turned it towards zero-sulphur Champagne. The estate vineyards cover 5 hectares in 22 plots, mostly clay-limestone with some chalk, with vines between 35 and 60 years old.
In the cellar, fermentations run on native yeasts, nothing is added, and every cuvée is Brut Nature with no dosage and no added sulphites. The Blanc d'Assemblage is the house blend of Chardonnay and Meunier with a little Pinot Noir, also in magnum. Blanc de Chardonnay and Blanc de Meunier show each grape on its own, and the Rosé is Brut Nature too. Volumes are small and the bottles go quickly.
