Cremant Solera is a natural wine crafted by Domaine Achillée, in the Alsace region in France. This sparkling wine is made with Chardonnay, Pinot Auxerrois, Pinot Blanc, Pinot Gris, Pinot Noir and Riesling grapes.
This is awesome as has a dominant AGED Riesling element with slight petrolium hits, preserved lemons, mildly oxidative, nuts.
Vinification of Cremant Solera by Achillée
Composition: 40% Riesling, 15% Pinot Blanc/Auxerrois/Chardonnay/Pinot Noir.
Soil : Gravel on Scherwiller (pebbles from the alluvial cone of the Villé valley, very poor/light, little clay, very reactive), slopes on the North side of the Frankstein of Dambach-la-ville.
Work: Very little exclusive settling, excellent raw material. Very loose kieselguhr filtration. No addition of sulfur at any time. No expedition liquor. Putting took place during the harvest on September 27, 2017, for an optimal dosage.
Time: fermentation for about a month, maturing in 100-year-old tuns for a year, then during the harvest, we take advantage of the fresh juice to make a liqueur de tirage. The wine then waits for a minimum of 60 months on laths before being disgorged, again without dosage. The volumes are completed by the same wine.
