Zidarich wine
Agricola Zidarich is run by Benjamin Zidarich, a natural wine producer from Carso in the Friuli region in Italy, which both borders and share many similarities and culture to Slovenia. Farming mostly local grape Vitovska, alongside Sauvignon, Malvasia and Merlot, the limestone soil in the Carso is very low before it hits bedrock, which helps give more complexity and minerality to the wines.
Founded in 1988, the winery now farms 8 hectares producing around 28,000 bottles a year, which do not see any added Sulphur throughout the winemaking process and the Lunar cycle is followed strictly throughout the process. Many of the wines are fermented in large concrete vats and skin-contact maceration is often used.
