How is Vin Jaune "Les Bruyeres" made?

This special, 15% white wine is made with 100%  Savagnin grapes, which undergo the usual Vin Jaune process aging under flor for at least 6 years + 3 Months in barrel, making the wine oxidative.Stephane Tissot was the first in the region to showcase terroir is also relevant in Vin Jaune, and as such, he vinifies all his Vin Jaune plots seperately.

Les Bruyeres is taken from a famous plot of 40-45 year old vines growing on Clay soils, with a Blue Marl subsoil.

What difference does soil type make to Vin Jaune?

Most Vin Jaune producers will assemble all the plots they have from all different soil types into their production of Vin Jaune, and the importance of the barrels and cellar was given the focus. Stephane Tissot however, has showcases in his range of Vin Jaune the stark differences the soils from Trias and Lias create even with an oxidative style, which can be quite powerful.

This is why he is a pioneer of Vin Jaune, and in our mind and many others with his very low intervention methods to let the wines shine throughout - a master in the minds of wine lovers.
