Assyrtiko is a white grape originating from Santorini, but now widely grown all over Greece. What's rare about it is that it's able to maintain crisp acidity in a hot dry climate, leading to a concentrated and aromatic flavour that is still balanced. This grape is great for people looking for unconventional, intense styles of whites that lean towards texture and density.
