Ayunta
Ayunta is a family owned natural winemaker in Mount Etna in Sicily. There they hand-harvest indigenous grapes from 2.8 hectares of vineyards, situated about 700 meters above sea level. Ayunta prefer to think of themselves as grape-growers even before winemakers, and their winemaking philosophy is only grapes and time - no additives except a tiny amount of sulphur are used and the wines are released only when deemed ready.
