Bonnet Ponson Champagne
Bonnet-Ponson is run by Cyril Bonnet, a natural champagne wine producer located in Chamery, near Reims. With the family owning land here for 150 years now accumulating to 10.5 hectares, the estate cares very much for the land and use a wide variety of teas in the vineards, which are based in 50 different parcels, and also feature the grape Petit Meslier. While the vineyard was farmed sustainably by his father, it was never certified - but now run by son Cyril Bonnet, the vineyard is fully chemical-free and fully certified.
Sulphur is only used occasionaly and minimalistically on 40% of the production, with the remaiming 60% seeing none which is why Bonnet-Ponson champagnes are vibrant and in such high demand in the natural wine world. Popular champagnes by Bonnet-Ponson include the Second Nature and Perpétuelle wine, which uses reserve base Champagne wine.

Cyril is focusing on making wines with little to no dosage, away from the traditional method where a very small amount of dosage - a sweet wine - is added to the bottle. If none at all, the Champagne will be bracingly dry. In the vineyard, mainly Pinot Noir is cultivated, with smaller quantities of Pinot Meunier and Chardonnay.
