Deix

Deix by Celler Tiques is a natural wine made in Penedes, Catalonia with Xarel lo grapes.

Production details of Deix: Deix is made by Joan Rubió at Celler Tiques in Penedès, Catalonia. Joan has earned a reputation as the "master of Xarel·lo". The grapes are hand-harvested and crushed, with only the first free-run juice kept. The wine ferments with wild yeast in stainless steel, then ages under a flor layer in amphora.

Tasting Notes: We have not yet tried this vintage of Deix by Celler Tiques, but we hear it has notes of citrus, orchard fruit, oxidative nuttiness and a saline mineral finish.
