Humusweine sind Naturweine, die auf Quinta do Paço, einem kleinen Familienbauernhof, etwa eine Stunde nördlich von Lissabon, hergestellt werden. Hier herrscht häufig eine kühlende Meeresbrise und eine hohe Luftfeuchtigkeit. Dieses kühlere Mikroklima ermöglicht eine längere Reifezeit der Trauben und einen gleichbleibenden Säuregehalt. Die meisten angebauten Trauben sind traditionelle portugiesische Sorten wie Arinto, Fernu Pires, Vital (für Weißweine) und Castelu, Touriga Nacional, Tinta Barroca für Rotweine sowie ein kleiner Anteil Syrah.
