Olivier Cohen - Wine Bar to Winemaker
Olivier Cohen first developed a passion for natural wine when working in a wine bar in Nice. When that was no longer enough for him, he decided to learn how to make his own wine, and trained under several notable French winemakers including Thierry Allemand in Cornas. Finally, in 2014 he acquired several plots (7.5 hectares of organic vines) with different terroirs in Hérault, Languedoc, and set off to create his own wines at only 26 years old.
Low-intervention Languedoc Juice
While his rosé first caught the attention of natural wine enthusiasts in Paris and New York, Cohen now also makes a variety of red wines from Cinsault, Grenache, Syrah, Merlot, Carignan, Mourvèdre and Cabernet Sauvignon. Since 2017, he has also been making négoce wines, sourcing grapes from organic growers in the area to produce collaborative wines under the well-known ‘Déferlante’ label. Cohen’s focus is on biodiversity in the vineyards, low-intervention & chemical-free winemaking, and creating wines that express their terroirs.
