About Babatise from Clos Bateau
Born after we’ve lost a part of the Sauvage we came up with a totally new and creative idea.
Luckily we had good connections in Alsace where we were able to buy Sylvaner, Riesling and a tiny bit of Gewurztraminer grapes (biodynamically grown in Alsace and planted on schist). We wanted to do something different with it. So we decided to do a direct press, age the wine in fiber and after age the wine even more on the lees of Mayga (Gamay) in used barrels for another 3 months. The Gamay lees have brought the wine more depth and a velvety taste, color wise it’s peachy (but technically a white wine). Just a little different, like us.
