Vinos Ambiz is a natural wine project run by Fabio Bartolome, located in the Sierra de Gredos region, just northwest of Madrid. Fabio, originally from Scotland with Italian roots, moved to Spain about 20 years ago and has been crafting low-intervention wines since 2003. Known for his quirky and down-to-earth personality, Fabio produces wines that are truly unconventional — made using only 100% grapes, with no additives. One of his most popular wines is Alba, a standout orange wine that’s a top seller at MORE Natural Wine.
Recently, Fabio has expanded his influence by starting The School of Natural Wine, where he teaches aspiring winemakers the art of natural wine production — a pioneering initiative in the field.
