Fermentations start spontaneously, and since 2022 Carlos has worked without cellar additions of SO2 / sulphites. Maceration and maturation are adjusted to the grape and intended expression of each cuvée. Some whites are pressed directly, reds can be extracted gently, while other wines spend longer periods in contact with their skins.
The labels and names show the playful side of the project, with cuvées including Départ en Vacances, Nuit Blanche, Georges, La Poumista, Mort aux Cons and Nobody's Fault but Wine. Behind the humour is careful work with low yields, old vines and small production, giving a personal view of Roussillon through a wide palette of regional grapes and several different approaches to maceration.
