Crémant Brut Nature, Levures Indigènes 2020 is a natural wine crafted by Domaine de la Touraize, in the Jura region in France. This sparkling wine is made with Chardonnay and Savagnin grapes, and is special because the secondary fermentation is done with their own concoction of wild yeasts, which is VERY hard to do and requires using the fermenting juice of the next years vintage when at a very specific time, and with the right amount of yeast. This is similar to Stephane Tissot's “Indigene”, and requires a lot of skill and patience, resulting in a slower refermentation too which can add more complexity.
How does Cremant Levures Indigénes 2020 compares to the other Touraize Cremant 2020?
The slightly cheaper Touraize Cremant 2020 has a crisper, leaner body with salty, mineralic aspects which reveal themselves later in the glass.
The Cremant Levures Indigénes 2020 is more rounded, with a pastry touch and raisin aspects, with noticeable less bubble structure than the other but more buttery in profile.
On a taste test with our team we loved them both, and were split but the majority said if they could only have one it would be the Cremant Levures Indegénes but there are no complaints with either! Excellent value
